If you go to Fez, you MUST stay with Stephen and Bruno. Their house is amazing and they are the loveliest hosts. We especially enjoyed the delicious breakfast (with homemade jams and fresh-squeezed juices) and relaxing on the gorgeous roof-top terrace with panoramic views of the Medina.
